Instructions
Cook onion.
- Heat olive oil in a large pot. Add onion and cook for 6 minutes until soft.
Add garlic.
- Stir in garlic and cook for 1 minute.
Add spelt and tomatoes.
- Add spelt grains and chopped tomatoes. Stir well.
Pour in stock.
- Add vegetable stock and sugar if using. Bring to a boil.
Simmer soup.
- Reduce heat. Cover and simmer for 40 minutes until spelt is tender.
Season and finish.
- Season with salt and pepper. Stir in basil just before serving.
