Prepare the jackfruit.
- Drain and shred the jackfruit with your hands or a fork to create small strands.
Cook the base.
- Heat olive oil in a pan. Add chopped onion and garlic. Cook for 2–3 minutes until soft.
Add the spices.
- Stir in smoked paprika, chilli powder, cumin, salt, and pepper. Mix to coat the onion and garlic.
Add the jackfruit.
- Add the shredded jackfruit. Stir well to cover it with the spice mix.
Add liquid and simmer.
- Add tomato puree and water. Simmer for 10–12 minutes until the jackfruit softens and absorbs the sauce.
Warm the tortillas.
- Heat a dry pan and warm each spelt tortilla for 20–30 seconds per side.
Assemble the tacos.
- Add a spoonful of spicy jackfruit to each tortilla. Top with avocado, sliced red onion, and coriander.
Serve.
- Squeeze lime over each taco and serve warm.
