  1. Heat the oven to 220 C / 425 F with a rack in the upper third. Set a wire rack inside a 33 x 46 cm / 13 x 18 inch sheet pan and brush the rack lightly with oil.
  2. Slice each chicken breast in half horizontally to make 4 cutlets. Place them between two sheets of parchment and pound to 1.5 cm / 1/2 inch thick. Season both sides with the salt and pepper.
  3. Set out three shallow dishes (23 cm / 9 inch). Put the spelt flour in the first and the beaten eggs in the second. In the third, rub the breadcrumbs, 30 g Parmesan, oregano, garlic powder and 2 tbsp olive oil together with your fingers until the crumbs look like damp sand.
