Spelt Sushi Burritos with Tofu and Mango
Description
A fresh sushi-style burrito made with cooked spelt, marinated tofu, ripe mango, and crisp vegetables wrapped in nori sheets. Easy to assemble, filling, and ideal for quick meals or packed lunches.
Ingredients
Instructions
- Cook spelt in water for 25 minutes until tender. Drain well.
- Stir rice vinegar and maple syrup into warm spelt. Cool slightly.
- Heat a non-stick pan over medium heat.
- Cook tofu with soy sauce and sesame oil for 6–8 minutes.
- Remove tofu from heat and cool briefly.
- Lay one nori sheet on a flat surface.
- Spread half the spelt across the centre.
- Add tofu, mango, avocado, carrot, and cucumber.
- Fold bottom edge up, then sides in, and roll firmly.
- Repeat with remaining ingredients. Slice and serve.
- Note: Do not overfill or the wrap will split.
