Add egg yolk and vanilla.
- Mix until smooth and combined.
Add dry ingredients.
- Sift in spelt flour and salt. Mix gently until a soft dough forms — don’t overmix.
Chill the dough.
- Shape into a log or flatten into a disc, wrap, and refrigerate for 30 minutes.
Preheat oven.
- Heat to 180°C (160°C fan) and line a baking tray with parchment paper.
