Make the pastry.
- Mix flour and salt in a bowl. Rub in butter until mixture resembles breadcrumbs. Add egg yolk and just enough water to form a smooth dough.
Chill the dough.
- Shape into a disc, wrap in cling film, and refrigerate for 30 minutes.
Caramelise the onions.
- Heat oil and butter in a large pan over low heat. Add onions and cook gently for 20–25 minutes, stirring occasionally. Add sugar and balsamic vinegar, then cook 5 minutes more until deep golden and soft.
Prepare the base.
- Preheat oven to 180°C (160°C fan). Roll out pastry on a floured surface and line a 22 cm tart tin. Prick the base and blind bake with baking paper and beans for 12 minutes. Remove the paper and bake for another 5 minutes.
Make the filling.
- In a bowl, whisk eggs, crème fraîche, salt, pepper, and thyme. Stir in half the goat cheese and the caramelised onions.
Assemble the tart.
- Pour the filling into the pastry case. Crumble the remaining goat cheese on top.
Bake.
- Bake for 20–25 minutes until set and lightly golden.
