- Toss the pumpkin cubes with 2 tbsp olive oil, thyme, salt, pepper, and chili flakes on the pan. Spread them in a single layer, without crowding.
- Roast for 25 to 28 minutes, turning once, until the edges turn deep golden brown and a fork slides through the flesh with no resistance.
Cook the Orzo
- While the pumpkin roasts, bring the vegetable stock to a boil in a 3-quart / 2.8 L saucepan. Add the spelt orzo and cook for 7 to 9 minutes, checking at 7 minutes since spelt orzo cooks faster than wheat orzo and turns mushy past al dente.
- Drain the orzo in a colander, reserving 120 ml / 1/2 cup of the cooking liquid.
