Season lamb.
- Toss lamb with flour, salt, and pepper.
Brown lamb.
- Heat oil in a large pot. Brown lamb in batches. Remove and set aside.
Cook vegetables.
- Add onion, carrots, and celery. Cook for 8 minutes until soft.
Add garlic and tomato purée.
- Stir in garlic and tomato purée. Cook for 1 minute.
Build stew.
- Return lamb to pot. Add rosemary, bay leaf, spelt, and stock.
Simmer.

Season and rest.
