Instructions
Prepare the cauliflower steaks.
- Cut the cauliflower through the core into two thick steaks. Keep the leaves for another recipe.
Season and dust.
- Mix spelt flour, smoked paprika, garlic powder, salt, and pepper. Dust each steak lightly on both sides.
Pan-sear the steaks.
- Heat olive oil in a large pan over medium heat. Cook the cauliflower steaks for 4–5 minutes per side until golden.
Finish in the oven.
- Place the steaks on a tray and bake at 190°C for 12–15 minutes until tender in the centre.
Make the chimichurri.
- Mix parsley, oregano, garlic, olive oil, vinegar, salt, and chilli flakes in a bowl. Stir until combined.
Serve.
- Plate the cauliflower steaks and spoon chimichurri over the top. Serve at once.
