- Mix spelt flour, oats, sugar, baking powder, cinnamon, and salt in a bowl.
- Add maple syrup, coconut oil, vanilla, and plant milk.
- Stir until a thick, even mixture forms.
- Press mixture firmly into the prepared tin.
- Smooth the surface with the back of a spoon.
- Bake for 25 minutes until lightly golden.
- Cool fully in the tin to set.
- Slice into bars and serve.
- Note: Bars firm up as they cool. Do not cut while hot.
