Instructions

Mix dry ingredients.
- In a bowl, whisk spelt flour, baking powder, and salt.

- Beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
Combine wet and dry.
- Alternate adding dry mix and champagne to the butter mixture until smooth.
Bake.
- Spoon batter into cupcake cases. Bake 16–18 minutes or until golden and springy to touch. Cool on a wire rack.
Make frosting.
- Beat butter and icing sugar until fluffy. Add champagne and beat again until creamy.
