Spelt Cinnamon Rolls

Soft spelt dough rolled with cinnamon and sugar, baked to golden perfection. Ideal for breakfast, brunch, or a sweet snack.

Instructions
Prepare the dough.
- In a bowl, combine warm milk, yeast, and sugar. Let sit 5 minutes. Add spelt flour, melted butter, egg, and salt. Knead into a soft dough.
First rise.
- Cover and leave in a warm place for 45–60 minutes until doubled in size.
Roll out dough.
- Roll dough on floured surface into a rectangle (approx. 30x20 cm).
Add filling.
- Spread softened butter over dough. Mix brown sugar and cinnamon, then sprinkle evenly over butter.
Shape rolls.
- Roll dough tightly from long edge. Cut into 8 equal rolls. Place in greased baking tray.
Second rise.
- Cover and let rise 15–20 minutes.
Bake.
- Preheat oven to 180°C (160°C fan). Bake rolls 18–20 minutes until golden.
Optional icing.
- Mix icing sugar and milk, drizzle over warm rolls. Serve immediately.
