Preheat oven:
- Set to 180°C (160°C fan) / 350°F. Line a baking tray with parchment.
Cream butter and sugar:
- In a bowl, beat softened butter and sugar until light and fluffy.
Add egg and vanilla:
- Mix in egg yolk and vanilla until smooth.
Add dry ingredients:
- Stir in spelt flour and salt. Mix until a soft dough forms.
Shape cookies:
- Roll dough into small balls (about 1 tbsp each). Place on tray and gently press a thumbprint in the centre of each.
Fill with jam:
- Spoon a small amount of jam into each indentation. Don’t overfill.
Bake:
- Bake for 10–12 minutes or until edges turn golden.
Cool:
