Heat oven and prep tin.
- Preheat oven to 180°C (350°F). Line a muffin tin with 6 cases.
Mix dry ingredients.
- Combine spelt flour, baking powder, bicarbonate of soda, ginger, cinnamon, sugar, and salt in a bowl.
Mix wet ingredients.
- In another bowl, whisk egg, oil, vanilla, and ginger beer. Do not overmix, as the bubbles help lift the muffins.
Combine wet and dry.
- Pour wet mixture into dry ingredients. Fold gently until just combined. Batter should look slightly lumpy.
Fill cases.
- Divide batter evenly between the 6 muffin cases.
Bake.
- Bake 16–18 minutes, or until muffins spring back when pressed lightly.
Rest and cool.
- Let muffins rest 5 minutes in the tin before transferring to a rack.
