Golden Spelt Ale Cheese Scones with a tender, nutty crumb and melted sharp cheese. Quick and easy to make, perfect for brunch, teatime, or as a savoury snack.

Preheat oven.
- Heat oven to 200°C and line a baking tray with parchment paper.
Mix dry ingredients.
- In a large bowl, combine spelt flour, baking powder, salt, and half the grated cheese.
Add butter.
- Rub in cubed butter until the mixture resembles coarse breadcrumbs.
Add ale and mustard.
- Stir in ale (and mustard, if using) until a soft dough forms. Do not overmix.
Shape scones.
- Roll or pat dough to ~2 cm thickness. Cut into rounds using a cookie cutter or knife. Place on prepared tray. Sprinkle remaining cheese on top.
Bake.
- Bake for 18–20 minutes until golden and risen.
Serve.
- Cool slightly and serve warm with butter or enjoy plain.
