Make the Spelt Polenta Base
- Grease a 23 x 33 cm / 9 x 13-inch baking dish and line with parchment paper, leaving an overhang on two sides.
- Bring the stock and garlic clove to a boil in a 3-quart / 2.8L saucepan over medium-high heat.
- Remove and discard the garlic. Reduce the heat to medium-low and whisk in the spelt flour in a steady stream, whisking constantly to keep lumps from forming.
- Cook, stirring often with a wooden spoon, for 8 to 10 minutes, until the mixture is thick and starts pulling away from the sides of the pan.
- Remove from the heat and stir in the butter, parmesan, thyme, salt, and pepper until the parmesan melts and the base turns glossy.
- Pour the mixture into the prepared dish and spread into an even layer about 1.5 cm / 0.6 inch thick. Cool at room temperature for 15 minutes, then chill for at least 1 hour, until firm to the touch.
