- In a large bowl or stand mixer, whisk together the spelt flour, remaining sugar, cardamom, and salt.
- Add the yeast mixture, egg, and softened butter. Mix until a soft dough forms, then knead for 6-8 minutes until smooth and slightly tacky. Stop once the dough holds together without tearing, spelt is more delicate than wheat dough.
- Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 60 minutes, until doubled in size.
