Make the Pastry: Rub butter into spelt flour and salt until crumbly. Gradually add cold water until dough forms. Wrap and chill for 20 minutes.

Prep the Filling: In a bowl, mix sausage meat with herbs, garlic, salt, pepper and mustard (if using). Set aside.

Assemble Rolls: Roll pastry into a rectangle (about 30x25cm). Cut in half lengthways. Place sausage mixture down the centre of each strip.

Seal and Shape: Fold pastry over filling and seal the edges with a fork. Slice into 8 rolls. Place on a lined baking tray.

Bake: Brush tops with beaten egg. Bake at 200°C (180°C fan) for 25–30 minutes until golden.
