Instructions
Prepare beef.
- Toss diced beef in flour seasoned with salt and pepper.
Brown beef.
- Heat olive oil in a large casserole pan. Brown beef in batches and set aside.
Cook vegetables.
- Sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
Deglaze pan.
- Pour in ale, scraping up any browned bits from the pan.
Combine ingredients.
- Return beef to the pan. Add stock, spelt grains, thyme, bay leaf, and season with salt and pepper.
Simmer casserole.
- Bring to a boil, then reduce heat to low. Cover and simmer gently for 2–2.5 hours until beef is tender and spelt grains are cooked.
Adjust seasoning.
- Taste and adjust salt and pepper as needed.
Serve.
- Remove bay leaf and serve hot with crusty bread or mashed potatoes.
