Fragrant Spelt Earl Grey Scones
Description
These light and tender scones combine wholegrain spelt flour and finely ground Earl Grey tea for a subtly citrus, floral twist.

250 g, Wholegrain Spelt Flour

Preheat Oven: Set oven to 200°C (fan 180°C). Line a baking tray with parchment paper.

Mix Dry Ingredients: In a large bowl, combine spelt flour, baking powder, salt, sugar, and Earl Grey leaves.

Add Butter: Rub cold butter into the flour mix with fingertips until it looks like coarse crumbs.

Add Liquid: Stir in yoghurt and vanilla extract (if using). Mix gently into a soft dough.

Shape: Turn the dough onto a floured surface. Pat into a 2.5 cm thick round. Cut into 8 wedges or use a cutter.

Brush & Bake: Transfer to tray. Brush with milk and sprinkle with sugar or honey. Bake for 18 minutes or until lightly golden.

Cool & Serve: Cool slightly before serving. Best warm.
