Spelt Summer Pudding
Description
A no-bake British dessert made with spelt bread and mixed summer berries. The fruit releases natural juices that soak into the bread. Fresh, light, and ideal for warm days or simple entertaining.
Ingredients
Instructions
- Place all berries, sugar, and lemon juice in a saucepan.
- Heat gently for 5 minutes until juices release. Stir lightly.
- Remove from heat and cool for 10 minutes.
- Line a pudding basin with spelt bread slices.
- Spoon half of the fruit mixture into the basin.
- Cover with more bread slices.
- Add remaining fruit and finish with bread on top.
- Press gently to compact the pudding.
- Cover and chill for at least 6 hours.
- Turn out onto a plate and slice to serve.
- Note: Save extra juice to pour over before serving.
