Preheat the oven to 180°C (160°C fan) and line a 20cm square baking tin with parchment paper.

In a large bowl, sift together the spelt flour, cocoa powder, baking powder, bicarbonate of soda, and salt. Mix well.

In a separate bowl, whisk the maple syrup, melted coconut oil, almond milk, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

Fold in the chocolate chips if using.

Transfer the batter to the prepared tin and spread evenly.
