Spelt Lavender and Honey Scones
Description
These delicate scones are made with nutty spelt flour, dried lavender, and natural honey. They’re quick to bake and ideal for a relaxed breakfast or tea-time treat.

250 g, Wholegrain Spelt Flour

Preheat Oven: Heat to 200°C (fan 180°C). Line a baking tray with parchment.

Mix Dry Ingredients: In a large bowl, mix spelt flour, baking powder, salt, and chopped lavender.

Add Butter: Rub butter into the dry ingredients with fingertips until it looks like breadcrumbs.

Add Honey and Liquid: Stir in honey, then pour in buttermilk and vanilla. Mix gently into a soft dough.

Shape Dough: Turn out onto a lightly floured surface. Pat into a 2.5 cm thick round. Cut into 8 wedges or rounds.

Top and Bake: Place on the tray. Brush with milk and honey mixture if using. Bake for 18 minutes until golden.

Cool and Serve: Let cool slightly. Serve warm with butter or fruit preserve.
