A hearty, quick bread made with spelt flour and oats. No yeast, no kneading—just mix, shape, and bake. Perfect for busy days or last-minute meals.

Preheat Oven: Heat oven to 200°C (fan 180°C). Line a baking tray with parchment.

Mix Dry Ingredients: In a bowl, stir together flour, oats, salt, and bicarbonate of soda.

Add Liquid: Pour in the buttermilk or thinned yoghurt. Stir quickly with a spoon or hands until a sticky dough forms.

Shape: Tip onto a floured surface. Shape into a rough round. Don’t over-handle.

Top and Score: Place on tray, dust with oats, and cut a deep cross on top with a sharp knife.

Bake: Bake for 35–40 minutes, until golden and sounds hollow when tapped underneath.

Cool: Cool on a wire rack for 20 minutes before slicing.
