Instructions
Preheat oven.
- Heat oven to 180°C. Grease a small pudding basin or ovenproof dish.
Prepare syrup.
- Melt golden syrup or treacle with butter and pour into the base of the pudding dish.
Mix sponge.
- In a bowl, whisk egg and sugar until light. Add melted butter, milk, and vanilla. Fold in spelt flour and baking powder until smooth.
Assemble pudding.
- Pour sponge mixture over the syrup in the dish.
Bake.
- Place pudding dish in a larger baking tray with hot water halfway up the side (bain-marie). Bake for 30–35 minutes until sponge is golden and set.
Cool slightly.
- Allow to rest 5 minutes before turning out.
Serve.
- Turn pudding onto a plate so syrup runs over the sponge. Serve warm with custard or cream.
