Spelt Potted Shrimp on Toast
Description
Creamy spiced brown shrimp in butter, chilled and served over toasted wholegrain spelt bread. A simple, nutritious twist on a British classic.

Melt the Butter: In a small pan, melt the butter over low heat. Reserve 2 tbsp for sealing later.

Flavour the Butter: Stir in nutmeg, paprika, cayenne, lemon juice, salt, and pepper. Remove from heat.

Add the Shrimp: Mix the shrimp and chopped parsley into the warm butter.

Pot and Chill: Spoon mixture into ramekins. Pour reserved butter over to seal. Chill for at least 30 minutes.

Toast and Serve: Toast the spelt bread until golden. Spread potted shrimp on top. Garnish with lemon or herbs.
