Spelt Lemon Poppy Seed Scones
Description
Soft, zesty scones made with wholegrain spelt flour, fresh lemon zest, and poppy seeds. Lightly sweet, full of fibre, and ideal for breakfast or snacks.
Ingredients
250 g, Wholegrain Spelt Flour

Preheat Oven: Preheat oven to 200°C (fan 180°C). Line a baking tray with parchment.

Mix Dry Ingredients: In a bowl, combine spelt flour, baking powder, and salt.

Rub in Butter: Add diced cold butter. Rub into the flour using fingertips until it looks like breadcrumbs.

Add Flavourings: Stir in lemon zest, poppy seeds, and honey or sugar.

Add Wet Ingredients: Mix in yoghurt and vanilla until a soft dough forms. Do not overwork.

Shape the Dough: Tip onto a lightly floured surface. Pat into a 2.5cm thick round and cut into 8 wedges or use a cutter.

Top and Bake: Place on tray. Brush tops with milk and sprinkle sugar if using. Bake for 18 minutes or until golden.

Cool and Serve: Let cool slightly. Serve warm or at room temperature.
