These soft scones are made with wholegrain spelt, naturally sweet dates, and crunchy walnuts. A quick, fibre-rich bake perfect for breakfast or snacks

Preheat Oven: Heat oven to 200°C (fan 180°C). Line a baking tray with parchment paper.

Mix Dry Ingredients: In a bowl, mix spelt flour, baking powder, and salt.

Rub in Butter: Add diced butter. Rub with fingertips until mixture resembles breadcrumbs.

Add Dates and Walnuts: Stir in chopped dates and walnuts.

Add Liquid: Add honey, yoghurt, and vanilla. Mix until dough comes together. Avoid overmixing.

Shape Dough: Turn onto a lightly floured surface. Pat into a 2.5cm round. Cut into 8 wedges or use a cutter.

Top and Bake: Transfer to tray. Brush with milk and honey if using. Bake for 18 minutes until golden.

Cool and Serve: Cool slightly on a wire rack. Enjoy warm or at room temperature.
