Spelt Cinnamon Swirl Bread
Description
A soft, slightly sweet loaf made with spelt flour and filled with a cinnamon swirl. Easy to make, fibre-rich, and perfect for toast, brunch or snacks.

Mix the Dough: Combine flour, salt, yeast and sugar in a bowl. Whisk together egg, warm milk and oil, then add to dry ingredients. Mix to form a soft dough.

Knead: Knead for 8–10 minutes on a floured surface until smooth and elastic.

First Rise: Place in a lightly oiled bowl. Cover and rise in a warm place for 60–75 minutes until doubled.

Prepare Filling: Mix brown sugar and cinnamon.

Shape and Swirl: Roll dough into a rectangle (roughly 30x20cm). Spread with butter or oil, sprinkle cinnamon sugar. Roll up from the short end and place in a greased loaf tin.

Second Rise: Cover and rest 30–40 minutes until puffy.

Brush and Bake: Brush top with egg wash if using. Bake at 180°C (fan 160°C) for 30–35 minutes until golden and sounds hollow when tapped.

Cool: Let cool completely before slicing.
