Fluffy Spelt Brioche
Description

Mix the Base: Combine flour, yeast, salt, and sugar in a bowl. Mix the eggs, warm milk, and vanilla separately, then add to the dry ingredients. Stir to form a sticky dough.

Add Butter: Gradually work in the softened butter until fully combined. Knead for 8–10 minutes until smooth and elastic.

First Rise: Cover and let rise in a warm place for 1½ hours, or until doubled.

Shape: Knock back the dough and shape it into a loaf or divide into rolls. Place into a greased tin.

Second Rise: Cover loosely and rise again for 45–60 minutes until puffy.

Brush and Bake: Preheat oven to 180°C (fan 160°C). Mix egg with milk and brush over the dough. Bake for 22–25 minutes until golden brown.

Cool: Remove and cool completely on a wire rack.
