Light, chewy English muffins made with wholesome spelt flour. These stovetop muffins are easy to make and great for meal prep or breakfast sandwiches.

In a bowl, dissolve yeast in warm milk with honey. Let sit 5–10 minutes until foamy.

Stir in spelt flour, salt, and oil. Mix until a sticky dough forms.

Knead on a floured surface for 5–6 minutes until soft and smooth.

Place in a lightly greased bowl, cover, and let rise for 1 hour until doubled.

Roll out dough to about 3/4 inch thickness. Cut out 6 rounds using a cookie cutter or glass.

Place rounds on a tray dusted with semolina. Cover and let rest 30 minutes.

Heat a nonstick skillet or griddle on medium-low. Cook muffins 5–6 minutes per side until golden and cooked through.

Cool on a wire rack before splitting with a fork.
