Make the pastry: In a bowl, mix flour and salt. Rub in the butter until crumbly. Add egg and water, mix to form a dough. Wrap and chill for 30 minutes.

Cook the filling: Heat oil in a frying pan. Cook onion and garlic for 2–3 minutes. Add turkey and cranberries. Stir in sage.

Add liquid: Sprinkle in flour. Add stock and bring to a simmer. Stir in cream. Season with salt and pepper. Let cool.

Assemble the pie: Preheat oven to 200°C (fan 180°C). Roll out half the pastry and line a greased pie dish. Spoon in the cooled filling.

Top and bake: Roll out the rest of the pastry for the lid. Seal and crimp edges. Cut small steam vents. Brush with egg. Bake for 40–45 minutes.

Cool and serve: Let rest for 10 minutes before serving.
