Storage and Reheating
Store leftover spelt croque monsieur in an airtight container in the fridge for up to 2 days. The bechamel will firm up as it chills, which is normal.
Reheat in the oven at 190C/375F for 8 to 10 minutes, until the cheese re-melts and the bread crisps again. Skip the microwave, it turns the bread soft and the bechamel rubbery.
Assembled, unbaked sandwiches keep in the fridge for up to 24 hours. Bake straight from the fridge, adding 3 to 4 minutes to the bake time.
