Tips
- Press the tofu under a weighted plate for at least 15 minutes so the cornstarch coating can actually crisp.
- Fry the tofu in two batches in the 12-inch skillet to avoid trapping steam that keeps cubes soft.
- Reserve 120 ml of pasta water before draining the noodles in case the sauce needs loosening later.
- Whisk the sauce again right before adding it to the pan, since maple syrup settles at the bottom.
- Toss the crispy tofu into the noodles at the very end so the edges don't turn mushy in the sauce.
Variations
- Swap tofu for pan-fried tempeh cubes for a firmer bite and slightly more bitter edge.

Storage and Reheating
Store leftover noodles and tofu in separate airtight containers in the fridge for up to 3 days. Keeping them apart stops the tofu from turning soggy against the sauce.
Reheat the noodles in a skillet over medium heat with a splash of water, tossing until warmed through, about 3 minutes. Re-crisp the tofu separately in a 200 C / 400 F oven or air fryer for 6 to 8 minutes rather than the microwave, which softens the coating.
The sauce keeps well on its own in a sealed jar for up to 5 days, so you can make a double batch and use it across two meals.
Serving Suggestions
Garlic chilli spelt noodles with crispy tofu works as a full meal on its own, but a side of steamed bok choy or a quick cucumber salad rounds it out.
For a heartier plate, add a soft-boiled egg or a scoop of edamame on top. A squeeze of extra lime at the table keeps the flavors bright.
Leftovers make a good packed lunch. Pack the sauce-tossed noodles and tofu separately if you can, and combine right before eating.
