Note
Additional Notes
- Wring potato thoroughly; wet mixture steams instead of crisping.
- Use a nonstick 26 cm / 10-inch skillet for the easiest flip.
- Fry eggs in batches of two to keep whites from spreading together.
- Serve rösti straight from the pan for the best crust.

Equipment
- box grater
- clean kitchen towel
- large mixing bowl
- 26 cm / 10-inch nonstick skillet
- thin metal spatula
- large plate for flipping
Tips
- Wring the grated potato twice in a clean towel; leftover moisture is the main reason rösti turns soggy instead of crisp.
- Use a starchy potato like Russet or Maris Piper; waxy potatoes hold too much water and won't crisp the same way.
- Press the mixture firmly into the skillet with a spatula so the shreds bond into one solid cake, not loose strands.
- Fry eggs in two batches of two so the whites don't run together in a 26 cm / 10-inch skillet.
- Slide the rösti onto a plate before flipping it back into the pan; this keeps the crust intact instead of breaking apart.
Variations
- Add 50 g grated Gruyère to the potato mix for a melted, savory layer inside the crispy crust.
- Swap fried eggs for poached eggs if you prefer a softer white instead of crisp edges.
- Mix in 1 tsp smoked paprika with the potatoes for a smoky, slightly spiced version of the rösti.
Storage and Reheating
Store leftover rösti in an airtight container in the fridge for up to 3 days. Reheat it in a dry 26 cm / 10-inch skillet over medium heat for 3 to 4 minutes per side, until the crust crisps up again.
Skip reheating leftover fried eggs. The whites turn rubbery and the yolk sets hard, so fry fresh eggs each time you serve leftover rösti.
Freezing isn't recommended here. The potato texture turns watery and grainy once thawed, and the crust won't crisp back up properly.
Serving Suggestions
Serve the rösti wedges warm, straight from the pan, with a fried egg on top of each piece. A small pile of arugula dressed with lemon adds a sharp contrast to the rich egg yolk.
Smoked salmon or crisped bacon on the side rounds this into a fuller brunch spread. A dollop of sour cream or a spoon of apple sauce is also a classic pairing for rösti.
For a lighter plate, add sliced tomatoes and a scatter of chives over the eggs.
