Tips
- Pat the cod dry with paper towels before coating, so the flour grips and the crust stays on the fish.
- Rest the coated strips on a wire rack for 10 minutes, which sets the crumbs before they meet the oil.
- Fry in three batches of 5 or 6 strips, and let the oil recover for 30 seconds between batches.
- Check one thick strip with an instant-read thermometer. It should read 145 F / 63 C before you remove the batch.

Variations

Storage and Reheating
Fried fish tacos are best fresh. The crust loses its crunch within about 10 minutes, and reheating dries out the coating, so fry the fish just before you eat.
Prepare the other parts ahead instead. Keep the yogurt sauce in a jar in the fridge for 3 to 4 days. Store shredded cabbage and carrot undressed in an airtight container for 2 to 3 days, then add the lime dressing shortly before serving.
If fried fish is left over, cool it and refrigerate it in an airtight container for 1 to 2 days. Eat it cold, flaked over the slaw. Do not freeze it, since the coating turns soft when thawed.
