Tips
- Steep the tea bags no longer than 5 minutes so the milk doesn't turn bitter.

Storage and Reheating
Pancakes keep in an airtight container in the fridge for 2 to 3 days. Reheat them in a dry skillet over low heat for a minute per side, or in a toaster on a low setting, until warmed through.
The syrup-coated tapioca pearls don't hold up the same way. They firm up and turn chewy in an unpleasant way once chilled, so plan to eat them the same day you cook them rather than storing leftovers.
If you want pancakes ready ahead, freeze plain cooked pancakes (no boba) between sheets of parchment for up to 1 month, then reheat from frozen in a 160 C / 320 F oven for 8 to 10 minutes and cook a fresh small batch of pearls to top them.
Serving Suggestions
Stack the pancakes three high and pour extra brown sugar syrup down the sides so it pools on the plate. A cold glass of milk on the side echoes the milk tea flavor in the batter.
