Tips

Storage and Reheating
Store cooled cookies in an airtight tin at room temperature. They stay crisp for up to two weeks. Keep layers separated with baking paper if you're stacking them.
If the cookies soften over time, place them on a baking sheet and warm them in a 160 C oven for 5 minutes. They crisp back up as they cool.
Undecorated cookies can be frozen for up to three months. Freeze in a single layer first, then transfer to a freezer bag. Thaw at room temperature for about 30 minutes before serving or decorating.
