Note
Additional Notes
- Cut florets to a similar size for even baking and crisping.
- Press breadcrumbs on firmly so the coating doesn't fall off in the oven.
- Leave space between florets on the pan to avoid steaming.
- Serve within 10 minutes of baking for the crispest bite.
Keywords:
spelt cauliflower bites, crispy cauliflower, spelt breadcrumbs, baked cauliflower snack, spelt coating
Equipment
- sheet pan 33 x 46 cm / 13 x 18 inch
- mixing bowls
- whisk
- tongs
- measuring cups and spoons
Tips
- Pat the cauliflower florets dry before dipping so the batter clings instead of sliding off.
- Press the breadcrumbs onto each floret firmly so the coating holds through baking.
- Space the florets out on the pan so hot air can circulate and the coating stays crisp, not steamed.
- Flip the florets halfway through baking so both sides brown evenly.
- Serve the bites within 10 minutes of coming out of the oven, while the crust is at its crispest.
Variations
- Toss the baked bites in buffalo sauce and butter for a spicy version served with a cooling dip.
- Add 1 tsp curry powder to the batter and serve with a yogurt and mint dip on the side.
- Swap smoked paprika for za'atar and serve with a lemon tahini sauce for a Middle Eastern twist.
Storage and Reheating
Store leftover spelt cauliflower bites in an airtight container in the fridge for 2 to 3 days. The coating softens as it sits, so don't expect the same crunch straight from the fridge.
To bring the crisp back, reheat in the oven at 200C / 390F for 8 to 10 minutes, flipping once halfway. Skip the microwave, since it turns the crumb coating soft and a little chewy instead of crisp.
These bites don't freeze well. The batter and breadcrumb coating turn mushy once thawed, so it's better to make a fresh batch when you want more.
Serving Suggestions
Serve spelt cauliflower bites warm, straight off the pan, with a small bowl of dip on the side. Yogurt-based sauces, garlic aioli, or a squeeze of lemon all work well against the crisp crumb coating.
For a light dinner, pair the bites with a simple green salad and a grain like quinoa or rice. They also work as a side next to grilled chicken or fish.
For gatherings, pile them on a platter with a couple of dipping sauces and toothpicks. They hold their crunch for about 10 minutes off the pan, so time the bake close to serving.
