Storage and Reheating
Spelt blueberry lemon cobbler keeps well at room temperature for about a day if the kitchen is cool. Beyond that, cover and refrigerate for 3 to 4 days.
Reheat individual portions in the oven at 160C/320F for 10 to 12 minutes, until the topping crisps again and the filling warms through. Microwaving works in a pinch, about 30 seconds, but the biscuit topping turns soft instead of crisp.
Freezing isn't recommended here. The biscuit topping turns gummy once thawed, and the blueberry filling separates.
